Roasted Broccoli & Red Peppers (Cheese Optional)

Ingredients:

  • 1 large head of broccoli, cut into florets
  • 1 red bell pepper, cut into strips
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • ½ tsp sea salt
  • ½ tsp black pepper
  • ¼ tsp smoked paprika (optional for extra depth)
  • ½ tsp Italian seasoning (optional)
  • (Optional) ½ cup shredded cheese (cheddar, mozzarella, Parmesan, or a blend)
  • (Optional) 1 tbsp grated Parmesan for extra flavor

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss broccoli and red peppers with olive oil, garlic, salt, pepper, smoked paprika, and Italian seasoning.
  3. Spread the vegetables evenly on a lined baking sheet.
  4. Roast for 18-22 minutes, flipping halfway, until broccoli is slightly crispy and peppers are tender.
