Roasted Broccoli & Red Peppers (Cheese Optional)
A simple, flavorful side dish with perfectly roasted vegetables—add cheese for an extra indulgent touch or enjoy it as is!
Ingredients:
- 1 large head of broccoli, cut into florets
- 1 red bell pepper, cut into strips
- 2 tbsp extra virgin olive oil
- 2 cloves garlic, minced
- ½ tsp sea salt
- ½ tsp black pepper
- ¼ tsp smoked paprika (optional for extra depth)
- ½ tsp Italian seasoning (optional)
- (Optional) ½ cup shredded cheese (cheddar, mozzarella, Parmesan, or a blend)
- (Optional) 1 tbsp grated Parmesan for extra flavor
Instructions:
- Preheat oven to 400°F (200°C).
- In a large bowl, toss broccoli and red peppers with olive oil, garlic, salt, pepper, smoked paprika, and Italian seasoning.
- Spread the vegetables evenly on a lined baking sheet.
- Roast for 18-22 minutes, flipping halfway, until broccoli is slightly crispy and peppers are tender.
- (Optional) If using cheese, remove the tray from the oven and sprinkle the shredded cheese over the vegetables. Return to the oven for 3-5 minutes until melted and bubbly.
- (Optional) Sprinkle with Parmesan before serving for extra flavor.
