Keto Meatloaf or Muffins – A New Twist on a Classic Favorite

Whether you’re craving a hearty slice or prefer grab-and-go portions, this keto-friendly recipe delivers classic flavor with a low-carb twist. Use it to make one delicious meatloaf—or bake it in a muffin tin for perfectly portioned Keto Meatloaf Muffins.


Ingredients

Protein
• 1 lb ground beef (85% lean for optimal juiciness)

Binders & Moisture
• 1 large egg, room temperature
• ¼ cup almond flour or crushed pork rinds
• 2 tablespoons grated Parmesan cheese

Aromatics & Flavorings
• ¼ cup finely chopped onion
• 1 clove garlic, minced
• 1 teaspoon dried Italian seasoning
• ½ teaspoon salt
• ½ teaspoon black pepper

Tomato Glaze 
• 2 tablespoons tomato paste
• 1 tablespoon Bragg’s Liquid Aminos
• 1 teaspoon fresh lemon juice


Instructions: Meatloaf or Muffins

1. Preheat the Oven
Preheat to 375°F (190°C).
• For a loaf: Line a baking sheet with parchment paper or lightly grease a loaf pan
• For muffins: Lightly oil a 12-cup muffin tin (avocado oil works well)

2. Prepare the Meat Mixture
In a large bowl, combine the ground beef, egg, almond flour or pork rinds, Parmesan, onion, garlic, Italian seasoning, salt, and pepper. Mix gently—avoid overworking the meat.

3. Shape & Assemble
Loaf: Form into a 6-inch long, 3–4 inch wide loaf
Muffins: Divide mixture evenly among muffin cups and press lightly to flatten tops

4. Make the Glaze
In a small bowl, mix tomato paste, Bragg’s, and lemon juice.
Spoon or brush glaze over the loaf or each muffin top.

5. Bake
Loaf: Bake 40–45 minutes, or until internal temp reaches 160°F (71°C)
Muffins: Bake 20–25 minutes, same temp goal

6. Rest & Serve
Let rest 5–10 minutes before slicing (loaf) or removing from muffin tin. Serve warm.
