Shredded Pork Bowls with Lemon Slaw, Black Beans & Avocado ๐Ÿฅ‘๐Ÿ‹

Base:

  • 1 cup cooked rice (brown, white, or cauliflower rice)

Protein & Fiber:

  • 1ยฝโ€“2 cups heated shredded pork ๐Ÿ–

  • 1ยฝ cups cooked black beans (canned or see recipe: Slow Simmered Black Beans) ๐Ÿซ˜

Lemon Cabbage Slaw:

  • 4 cups shredded green or red cabbage ๐Ÿฅฌ

  • 1 cup shredded carrots (optional) ๐Ÿฅ•

  • 2โ€“3 tbsp fresh lemon juice ๐Ÿ‹

  • 1 tbsp Dijon mustard

  • 2 tbsp olive oil ๐Ÿซ’

  • Salt & pepper to taste

  • Optional: lemon zest, chopped parsley, or thinly sliced green onions;

    • For a slightly sweeter slaw, add ยฝโ€“1 tsp honey or maple syrup.

Toppings:

  • Sliced avocado ๐Ÿฅ‘

  • Fresh jalapeรฑo, thinly sliced ๐ŸŒถ

  • Chopped cilantro

  • Black Beans:
    Heat cooked black beans
    (homemade or canned).

  • Make the Lemon Slaw:
    In a large bowl, whisk together ๐Ÿ‹ lemon juice, Dijon mustard, olive oil, salt, and pepper.
    Add shredded cabbage (and carrots, if using), and toss to coat.
    Let sit while you prep the restโ€”it gets better as it marinates. ๐Ÿฅฌ

  • Warm the Shredded Pork (or pick your own protein):
    Reheat your shredded pork in a skillet over low heat.
    Add a splash of bone broth or water if needed. Warm through and season to taste. ๐Ÿ”ฅ
