Roasted Asparagus with Parmesan and Lemon 🌿🍋

🛒 Ingredients:

  • 1 bunch fresh asparagus (about 1 lb), ends trimmed
  • 2 tbsp olive oil
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 2 cloves garlic, minced (or 1/2 tsp garlic powder, optional)
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp fresh lemon juice
  • Lemon zest (optional, for garnish)

👩‍🍳 Instructions:

1.  Preheat the Oven:

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or lightly grease it.

2.  Prepare the Asparagus:

  • Rinse and trim the tough ends of the asparagus.
  • Arrange the asparagus in a single layer on the baking sheet.

3.  Season the Asparagus:

  • Drizzle olive oil over the asparagus and sprinkle with salt, pepper, and minced garlic (or garlic powder if using).
  • Toss gently to coat evenly.

4.  Roast:

  • Roast in the preheated oven for 12-15 minutes until the asparagus is tender and slightly crispy on the ends.
  • In the last 2 minutes of roasting, sprinkle Parmesan cheese over the asparagus and return to the oven until melted.

5.  Add Lemon:

  • Remove from the oven and squeeze fresh lemon juice over the asparagus.
  • Garnish with lemon zest if desired.

6.  Serve:

    • Transfer to a plate and serve immediately.
