Shiraz Salad with Chickpeas

Shiraz Salad with Chickpeas is a vibrant mix of crunchy cucumbers, juicy tomatoes, fresh onion, and protein-packed chickpeas, all tossed in a zesty lemon dressing.

Ingredients

  • 3 Persian cucumbers
  • 3 plum tomatoes
  • 1/2 red onion
  • 1 can of chickpeas
  • 1 lemon
  • 1/4 cup olive oil
  • 1 tbsp of salt (to taste)
  • 1-2 tsps pomegranate molasses (optional)

Instructions

  1. Chop the veggies – Dice 3 Persian cucumbers, 3 Roma tomatoes (deseeded), and ½-1 red onion into small pieces.
    Use a Vidalia Chop Wizard to save time.
  2. Rinse & drain chickpeas – Use 1 can (15 oz) of chickpeas, or cook your own.
  3. Make the dressing – Whisk together ¼ cup olive oil, the juice of 1 lemon,  1 tbsp salt, and pomegranate molasses (if using).
  4. Toss it all together – Mix chickpeas, veggies, and dressing in a large bowl. Add ¼ cup of fresh herbs or a sprinkle of lemon zest to take it up a notch!
  5. Let it sit – Allow the flavors to meld for 10–15 minutes before serving.
  6. Enjoy! – Serve as a side dish or enjoy on its own.
